Preparation

  1. Preheat the oven to 170°C (340°F (171°C)).
  2. Trim the tops off the garlic heads to expose the cloves, keeping the bulbs intact.
  3. Remove any loose skin.

Cooking

  1. Place each garlic bulb on a piece of foil, drizzle with neutral oil, and add 2 thyme sprigs per bulb.
  2. Wrap tightly and bake for 1 hour until the garlic is soft and caramelized.
  3. Let cool, then squeeze the garlic cloves into a bowl and mash until smooth.

Plating & Serving

  1. In a medium bowl, whip the ricotta with a handheld mixer until smooth and airy.
  2. Incorporate the heavy cream, then fold in the garlic paste and lemon zest.
  3. Season with flaky sea salt.
  4. Transfer to a serving bowl, top with pistachios, a drizzle of olive oil, thyme leaves, and cracked pepper.
  5. Serve with your choice of crackers or toasted bread.

Notes

This dip can be prepared ahead of time and stored in the refrigerator, but is best served fresh for optimal texture and flavour.
